Have a Bunch of Fresh Basil Growing?

It's that time of year, when some of us have fresh herbs growing in our garden... I love this time of year! I do however at times find myself with an abundance of basil!
{and maybe mint, I love all the different mint plants, sweet, spearmint, chocolate....!} 
​So I am always looking for different ways to utilize the herbs that grow quickly! Here is a quick vinaigrette to try! It is great on pretty much anything you are grilling on the BBQ! From fresh veggies, to chicken, fish... just is a nice fresh flavor!  


What You'll Need
  • 2 cups fresh basil leaves (about 1 large bunch)
  • 1 small clove garlic (or more if you LOVE garlic like I do!)
  • 1/4 cup white wine vinegar (or champagne vinegar) You can also use apple cider vinegar here if you prefer. 
  • 1/2 cup extra virgin olive oil​ (organic, cold pressed)
  • pinch of pink Himalayan sea salt (to taste)
  • pinch of pepper (to taste)

How to Make It
  1. Rinse the basil leaves and pat them thoroughly dry.
  2. Peel and mince the garlic.
  3. Put the garlic and vinegar in a blender or food processor. Blend until the garlic is thoroughly combined into the vinegar.
  4. Add basil leaves into to the blender/food processor. Mix until basil is completely incorporated into the vinegar. It will resemble a puree texture. 
  5. With the blade going, slowly drizzle in the olive oil until you have a smooth (& beautifully green!) dressing. Add salt and pepper to taste. 
Use relatively immediately. The green of the basil will start to fade on any part of the dressing that sees air. Can be stored in the fridge in a tightly sealed glass jar.
